Recipe: Chocolate Berries with Cream

Chocolate Covered Berries and Cream Bowl

Ingredients: 

1. ½ cup frozen berries.

  • Berries are some of the healthiest foods you can eat, and they are one of my favorite foods. They’re low in calories and high in fiber and have lots of good vitamins and minerals, so they are super healthy for you! Many berries are very beneficial to heart health. The  berries I used for this recipe were strawberries, blueberries and cherries. Make sure to get them from the frozen section at the store.

2. ½ cup full-fat coconut milk

  • This is a tasty substitute to cow’s milk, making it dairy-free for all those who may be allergic to cow’s milk, and it provides a lot of health benefits, too. Two of these health benefits are that it’s known to reduce swelling, and it may, based on studies, reduce the levels of viruses and bacteria – things that can make you sick. 

Homemade Magic Shell:

1. 1.5 tablespoons coconut oil. 

  • Coconut oil is rich in medium-chain triglycerides or MCT’s, which is a type of saturated fat, but it is very healthy for weight loss. Based on studies, it will  increase the number of calories your body burns. A lot of people following the Keto diet will use this, too. Just don’t consume it in large amounts!

2. 2 tablespoons cocoa powder

  • Raw cocoa has  a lot of  antioxidants, which help protect you from getting sick. It is the highest plant-based source of many vitamins and minerals that  support a  healthy heart and brain.  

3. Dash of pure vanilla extract 

  • Vanilla extract is rich in “vanillin,” which is a powerful antioxidant, and it  also supports brain health. Just don’t use a lot of it, as a little bit goes a long way! 

4. ¾ tsp raw honey (optional) 

  • Honey is also good for helping to boost your immune system, as it supplies  you with many vitamins to help keep you in good health.  You will see people use this in teas to soothe a  sore throat or cough. It is very sweet, so don’t use too much!

    Instructions:

  1. Prepare your homemade magic shell by heating the coconut oil and string it together with raw cacao powder, vanilla bean extract, and honey. 
  2. Put frozen berries in a bowl and pouRecipe: Chocolate Berries with Creamr full-fat coconut milk over top. Allow the coconut milk to slightly harden (about a minute).
  3. Pour homemade magic shell over top of the berries and coconut milk mixture and allow to harden (about a minute).
